Coffee

So on the 5th day before Christmas my secret Santa Santa (Primitive Energy) gave to me....! A bag of Blue Bottle espresso which is being polished off as we speak and this a.m. I opened up what appears to be a Brewer ex kickstarter project - cold drip coffee press from Bauer. Coincidentally the Company hails from Ben, Primitive Energy's town!

Thanks Ben for the wonderful new brew method to try out. The cold brew method which I've never experienced is supposed to extract the coffee in a manner that allows the bright flavors to pop out while minimizing harsher tasting notes. Can't wait to play with this thing!

I was thinking real hard what to get you. There are many different takes on immersion brewers like a french press but they are just variations on the same theme with similar tastes. All of the cold brew immersion systems are similar in that they will still have that stomach churning acid and can have a distinct funky taste.

The new geeky toy wonder in the coffee world, your Cold Bruer is similar to the Japanese slow drip. 5 hour brew with a drip per second will make a very smooth tasting drink and will bring out more flavors than brewed hot. It will take some experimentation to get the 1 drip per second but I also bought one for myself and I did not have a problem once I set the drip. Cold brewing is also a great way to save money by using stale beans and not your fresh expensive beans and the slow drip can keep you entertained for hours.:D

My first drink I used too much water and it tasted like graham crackers. I have read descriptions that have said it had that profile but it has never came out so prominent like when used with this bruer. It was delicious, light, non stomach churning, more caffeine, and without the funky immersion taste. It doesn't brew quickly but coffee geeks love the details and I think you will like the taste.

Cold Bruer website and recipes. http://www.bruer.co/

WHAT IS COLD BREW?

Cold brew coffee is deliciously smooth and naturally sweet, its less acidic and less bitter than hot brewed coffee, and pairs beautifully with milk.

Brewed over the course of several hours, with cold water. Cold brew methods extract different compounds from the coffee, resulting a completely different flavor.

Made from all high quality materials; Borosilicate Glass, Stainless Steel, and Food grade silicone. Cold Bruer makes up to four cups of delicious velvety Cold brew Coffee. The adjustable valve lets you experiment with brew time between 3-12 hours, with a recommended six hour brew at one drip per second.

Cold Bruer uses slow drip methodology instead of the more common full immersion method resulting in higher flavor clarity, and a much cleaner coffee.

The Cold Bruer works by slowly dripping water through a bed of coffee, where it saturates then collects in the carafe below. Unlike full immersion there is no more attention required after set up, reducing the chances of over-extraction.

COLD BRUER: STAGES OF EXTRACTION

TASTE

In order to not completely overwhelm my taste buds, I tasted the least extracted stage first. That's the one on the right shown in the picture above marked 4/4. This sample was the 4th quarter ( and last) stage of the brew. I then sampled the third stage of the brew and so on...

4/4 stage. Very watery and tea like.
3/4 stage. Water/tea like taste similar to the first, with just a fleeting taste that it's cold brew you're drinking. Tanic.
2/4 stage. The raspberry, chocolate and lemon flavors we're accustomed to with this coffee comes through, but falls off quickly. Watery and weak finish.
1/4 stage. Intense, syrupy, overpowering.

You're very welcome!
If you need some more of that instant let me know, I've got the other half of that case in my cupboard. :D ;)

I'll open mine when I get up in 8 hours or so. Can't wait!

Your gag was hilarious, Thanks for the laughs and gifts too!

Everyone received awesome gifts! Thanks for setting this up Monofletch.

A quick shot with Orchunter93's Black and Tan Blend. Delicious. I'll get some tasting notes when I have more time.
My Tatanka and Sprint S110V Native 5 with some new scales I just got today.

Coffee lover here. After several years of enduring DFAC coffee, I decided to start fresh once I got settled back in Stateside. I left my old coffee brewer and grinders behind in my house, and bought all new here for my new apartment. I started with a

and immediately tossed the paper filters that came with it. Gold basket only, I paid good money for my coffee oils and I want them! I keep my current go-to grind in the hopper. Right now it's a Sumatran bold from a local roaster that's really interesting. I love the grinding and brewing right away after it's done being ground.

I also added a

for when I want to switch up. I just hit the 'No grind' button on the brewer when I add coffee from this. Today I'm drinking some Ethiopian from this and am thinking that it may do a stint as my go-to. :)

I'm also in the market for an espresso maker. Here's the one I want,

but don't want the $600 price tag. So far, no luck catching a sale. Hopefully after Christmas......

Nice equipment you have there, thanks for sharing.:)

Unfortunately espresso eqipment is expensive. Rancilio Silvia and Gaggia are popular especially with a modded PID for it but still have limited capabilities. What makes them outdated is highly inconsistent temperature control along with completely inadequate steam performance, poor intrashot stability (in the case of the Gaggias), and poor brew and steam recovery times.
The Crossland Coffee CC1 and Baratza Vario Grinder Package from https://www.seattlecoffeegear.com/crossland-coffee-cc1-baratza-grinder-package are the lowest priced, with decent features, best bang for you buck money but it still costs $1000.00. The best bang for your buck with all of the featured goodies would be a Breville 920XL DB. for around $1200.00.

A grinder will be your most important equipment. A less expensive way to go for an espresso is a good hand grinder with a minimum of 38 mm conical burrs, of course the larger burrs are normally better. Examples are Orphan espresso's Pharos $250, Lido 2 $175, and maybe the hasn't been released Rok grinder $200. For drip, a decent hand grinder for the price would be a Porlex Portable Hand Grinder, $42.00.

Those thunderstrike kevlar scales and clip look amazing! Did you make the scales yourself? Looking forward to your review on those coffees.

I noticed in the grocery store today McCafe Coffee for sale...
_57.jpg

When I was at Safeway last week they gave me coupon for $1.50 off of McCafe. I checked the coffee section and they didn't have it yet. Yesterday I was there again
and they had it, but I didn't have the coupon with me. It's on sale at $6.99 and with $1.50 off, it's worth trying. I read some reviews and most people say that it's
pretty good, but not the same as the coffee served in the stores. I think they are referring to the Premium Roast.

McD has been selling their ground coffee in Canada for awhile.

I got the French Roast- it was really bad. I've read the Premium Roast is what they serve in the restaurant- I'll try that soon.

I thought it was only right that I posted a pic with the gifted coffee and some traditional/ seasonal colors for the background.

Gregory's Night Vision 3.0 and 1 Tbs Italian sweet cream........ The first cup I had was straight nothing added and it was wonderful. Adding the sweet cream brought out some hidden flavors that I didn't get before. I must have added extra water, because it looks like I put a bunch of cream in, but it's about 1 tablespoon. Even so it is full of flavor. Very good coffee!! I will try again in my french press later.

Wrapped with care and a thoughtful note. It feels like Christmas.

3 bean varieties and a Kershaw Chive 1600. Very much in keeping with our coffee and blade theme here. :)

It's a sweet little blade.
Extremely sharp right out of the box. It's going right into my coin pocket for a non-intimidating carry that I can use at work. My main carry usually frightens my customers so this is a welcome addition to my collection.
I sampled the Sumatra already. Prepped properly in my new Chemex and it is delicious. I've been wanting some Sumatra lately and have been driving past the market but something told me to wait...
I'll give another a try tonight posed with 2 knives I just had re-scaled. Details later.

Thanks Danny. Have a great holiday along with everyone here.

Hey Wayne!

Glad you were able to receive your present and equally glad that you like it! I have found that a little tiny pocket blade is often really nice when doing double carry. I was talking to the owner of the store where I bought it and he said that he frequently uses it as a money clip when he needs. I know it was a little stiff for opening, but it should work in well and become nice and speedy. The USA assisted Kershaws are lightning fast!

Let me know what you think of the "Black & Tan" I have heard from a certain member (cough cough @Monofletch) that it is really great!

Merry Christmas my friend!

PS

JOHN YOU ROCK!!! I caved and opened my gift the other day (sorry for not putting up pics yet) and he has really blessed me!

Thank you.
I picked up the material here on the forum and sent the knives to forum member spketch who did the work. http://www.bladeforums.com/forums/showthread.php/1192333-Sketchen-Scales-Customs The ti clip was purchased on ebay.
I'm really happy with the results.
I couldn't choose just one knife to carry last night so I grabbed all 3.
Pulled them out of my pocket for a shot with some of the Corsican blend I received from my SS. :)

Wow that pic really shows the size difference with the Tatanaka! I am really enjoying my new toys!:)

Aeropress recipe:
30 grams in,
1 minute Bloom time with 1 minute pour time,
4 minute brew time with 1 minute pour and stir time,
2.5 minute press time.
Taste: Kind of bland but not watery with some weak acidic notes.

I bought a bag of McCafe Premium Roast and tried it this morning. I only make about 10oz. at a time, so I used 20g. of coffee in my Tiamo pour over thingy.
At first it tasted a bit weak and not much like McDonald's coffee, but it wasn't bad. About half way through the cup it began to taste more like McD's.

McDonald's uses filtered tap water. I use RO water. That probably makes a difference. Also, McDonald's brews their coffee into a grungy pot that probably
hasn't been washed in 10 years. That could add to the flavor. :p

I'll have to try more grounds later or tomorrow.

Some of the Small World Coffee Black and Tan blend I was gifted. I sprinkled a few extra Sumatra beans in the mix to lighten it up a bit.
A little smoky with some fruit and dark chocolate on the finish. Tasty.
The knife was a Lone Wolf armorers tool but I'm Glock-less these days so I swapped the blade into some Alan Putman scales and screwed on an STR low carry ti clip.

Peets Major Dickason has been a staple for over 20 yrs. Surprisingly similar in either whole bean or Kuerig, it never disappoints. Starbucks is excellent for

I've been having an ongoing argument with a friend about the Ottomatic.
My argument is why spend the $350 for something I can do better for far less $$
All the machine is going to do is heat and disperse water?? I can do that.
He doesn't see that the machine isn't really eliminating enough of the process to make it worth the $$
