Coffee

I do my cold brew with 60 grams of coffee wrapped in a Chemex filter. I let it soak for a day in the fridge.

That reminds me of all the furious grinding I had to do with my Hario. As you know it gets a lot tougher when you use lighter roasts. If you want to improve the Harios performance you can modify to stabilize the shaft otherwise it will give you a lot of inconsistent grinds. My Lido 2 is a breeze to grind with compared to my old Hario.

I was looking into the Orphan Hario mod but from what I gathered it diminishes the fine grinding capability. I think I'll leave it alone and use it for a backup for the Baratza Encore I ordered today. Thanks for the video! Made up my mind for me and it was cheaper than the Breville I was looking at. And I did see some poor reviews for reliability on the smart grinder so thanks for that as well.

I just bought the Bonavita kettle I'm using now without a thermostat so I'm going to grab a "Dorkfood" sous-vide controller. As stated, it'll serve multiple purposes and I've already got slow cookers and vacuum sealers so this one is an easy decision.

Congratulations on the purchase! Happy to help out when I can. Baratza is known for better quality, dependability, service, repair, and warranty than the Breville smart.

But be careful changing the grind settings frequently from fine to course and back again. As it can upset the machine for a while and can eventually damage and prematurely wear out the plastics inside the machine. Also you might have to keep a certain amount of beans in the hopper or it can upset the machine for a while too. We need a full review when you get it dialed in.:)

One of the deciding factors on the Baratza was the upgraded mech. Seems as though the plastic gears have been replaced.
It was only $129 shipped so I bought a new one.
And I'll definitely give my impressions.

What are your needs for the knife?
It's a largish, light blade that carries well but IMO a little thin at 3mm for a blade that large. Not a deal breaker but for my needs I'd like it to be a bit thicker and heavier for chopping and batoning if the need arises.
Just for some perspective, the PM2, which I believe you are familiar, has a 3.5mm blade.

It's unfortunate the Hossom line was discontinued. The Forester is on my want list. I'll find one in my price range one of these days...
Till then I'm looking at a Fox Hossom Vengeance. $190 shipped from Knifeworks. I'm almost ready to pull the trigger.
 
I'm really digging the JK Element! It's in a great price range. Going to pick up a mule at some point and trick it out the way Barman did. Maybe for camping season at some point. I just picked up my first a Mora and so far it's a pretty nifty blade I am going to try to thin it out a bit though and convex it a little bit first.

My wife sends me an instant message. She is so one track minded. In the IM, she's like what's with the coffee lately? (I usually do a Starbucks medium bean blended with a a Gregory's type bean to smooth out the dark roast of the medium Starbucks). It gives me the right jolt of coffee in the morning.

I tell her that I saw something interesting at the Supermarket. Cafe Bustelo Supremo, which I've never seen before so I tried it. She says,"tastes disgusting...I don't like any weak or fruity flavor."

I guess it would be too far fetched for a wife to tell her husband how she really feels? ROFLMAO.

Today's high was 6 degrees with wind gusts to 20! It was a blast walking out in that all day! I'm glad I had a Thermos full of Gregory's with me!!!

Just cracked open one of the bottles of espresso liqueur I made a week and a half ago. It's awesome.

Definitely plausible a lot of folks suggest that the AGR folding spear point was a DR design who is part of that HTM crew.
 
I'm 3/4 of the way through a bag of McCafe Premium Roast. It's not bad. By that I mean that it's drinkable. I only have 10 oz. of coffee in the morning, so the bag is lasting a long time.
I have tried 18 to 20 grams in my pour-over thingy. 19 g. seems to work best. Sometimes it tastes like McD's coffee and sometimes it doesn't. I use RO water, so that probably has
something to do with the taste.

I don't know if I will buy another bag. It only comes ground and I like to grind my own beans, but right now it's on sale for $5.99 and I have a $2 coupon. ;)
 
My vote is in for Peet's Sumatra Batak. Very pricy at $18/lb, but I'm going to get another pound this weekend.

It only comes in once a year in January.

The barista told me that it supposedly was like Sumatra with tobacco. But she didn't smoke, so she could only say that it was better than regular Sumatra. Well, she was right on both counts! It is like Sumatra on steroids, like your favorite Sumatra and your favorite pipe or cigar all mixed together. Fantastic!

I splurged for it because my wife goes crazy for Sumatra, but this stuff really is worth the extra $$!
