Coffee

I bought more Peet's --

House Blend -- First crafted by Mr. Peet, this blend of carefully selected, choice beans from our favorite Latin American origins brews a quality cup that's uniquely rich and approachable, with a pleasant spiciness. It's deep-roasted by hand in small batches to impart the most flavor and aroma.

Cafe' Domingo-- three Latin American coffees in this carefully crafted blend were selected for their balance and brightness, and the roast fine-tuned to brew the perfect medium-bodied cup

Brazil Minas Naturais-- We love natural Brazil coffees. They’re sweet, body-driven, and produce luscious espresso. The best examples exude a flavor like just-roasted hazelnuts.

I don't care for the Brazil Minas. I brewed it like I do Major Dickasons and it wasn't my favorite. It tasted like gas station coffee- nothing special. I'll try again in my press and see if there are any changes. I sure didn't taste hazel nuts! This is my first House blend. I read a bunch of good reviews. I will brew a pot in the morning. :D

Paradise roasters, SO Espresso Brazil Fazenda Rainha Natural
Location: Ramsey, Minnesota
Origin: Mogiana Region, Minas Gerais State, Brazil.
Roast: Medium
Est. Price: $12.95/12 ounces
Taste: Another chocolate and crema bomb. Lighter roast than Paradise's Hawaiian blend and more bitter. I had a difficult time getting the correct grind for the extraction time and flow, which probably led to the lack of clarity in the flavor.

17 grams in 30-34 grams out in 26 seconds.

Space cups to go with the Astronauts new espresso machine.

"Relying upon mathematical models and fluid dynamics, the mug’s curvature is made specifically to both keep espresso confined to the cup and easily transfer espresso to an astronaut’s maw. Liquid travels up the vessel and forms sippable balls of coffee. Thanks to the ISS’s new 3D printer, plans for the cup can be downloaded and then created in orbit at $500 per cup."

What is the proper extraction time?
I'm kind of following the premise that the finer the grind the longer it takes to extract given a proper tamp.
What is the proper tamp pressure?
Sometimes I'll grind too fine and my little machine won't push anything through but I think my skills are coming along. I even got my Baratza Encore dialed in well enough that it will produce a Turkish grind! Made 2 cups this past weekend with some Peet's African Mocha Sanani and it was awesome.

Guidelines say the optimal extraction time is around 25-30 seconds but that can change depending on your desired results.

Optimal tamp pressure is around 25-30 pounds but tamp pressure is not as important as the proper grind size, distribution, and even level seating in the portafilter. You can use this variable to speed up or slow down the extraction rate.

Having an espresso machine that doesn't achieve 9 bar and having grinds too fine can clog your espresso machine, which makes for a longer brew time, which can result in burned coffee and an over-extracted brew.

What you like best will be whats best for you. Have fun!:)

New kickstarter Manual Grinder $40 and up. https://www.kickstarter.com/projects/handground/precision-coffee-grinder-better-grind-more-flavor

"What sets Handground apart from other grinders?

* Locking top so bean particles don't fly out while you grind

* Side-mounted handle for better ergonomics

* Wide base for more stability while grinding

* 100g Capacity hopper able to contain enough coffee beans for 5 cups of joe

* Coarseness adjustment ring to select a grind setting with one twist

* 20 preset coarseness levels at 125 micron intervals fit for any method of brewing

* 38mm conical burrs made from densely sintered Alumina ceramic which has high strength and hardness, temperature stability, and high wear resistance and corrosion resistance

* Triple mounted stainless steel axle to eliminate burr wobble and produce a consistent grind

* Borosilicate glass catcher to prevent static and sticky grounds."

Another picture of the Emerson Persian I took for the Emerson subforum. Just a new thumb disc I made and a new clip. Also did a regrind to lose the chisel grind. Wasn't my cup of tea, better utility cutter now.
The espresso is Peet's Major Dickason's. Not too bad but tastes better through the Chemex.

New kickstarter for Kuissential EvenGrind grinder, $25+. https://www.kickstarter.com/project...offee-grinder-fresh-even-grinds-better/?scr=4

Whereas the old design for a manual grinder had an unstable, free floating burr, our Kuissential EvenGrind includes a removable stabilizing cage that keeps the burr steady while still being easy to clean and also an upper and lower bearing for extra support and smoother handle turning. When combined you can see that our burr is totally stable at the grind size you set.

If you use a French press with half coarse and half fine grind, the fine particles will over extract and give you a bitter tasting cup.

If you pull an espresso shot with half coarse and half fine grind, the coarse particles will under extract and give you a weak tasting espresso.

Thanks!

Major Dick's is my probably in my top 3 all time. The House Blend is similar, but not as BOLD.

It's a good blend when prepped correctly. I should have known the espresso would extract a little too much character.
I have another order on the way from Peet's now, 4 pounds, 2 blends and 2 single source. Next time around I'll grab a pound of the house. Probably a little less of a shock on my taste buds for the first morning cup.
