Coffee

I'm traveling for work. These are some of the things that get me through the day... :)

Macchiato at Chromatic Coffee in Santa Clara, CA. My local fix dealer when I'm in this area.

Bought some beans to use this week for the espresso machine here. Yes, I brought my own portafilter. :D

This is just a stock photo, but I have just started making my own cold brew and..... It is awesome! The wife and I tried some recently after seeing cold brew popping up everywhere and were instantly hooked. I ordered this "kit" which is just a coffee sock and a big mason jar, but it works very nicely. If you haven't tried it, definitely give it a shot.

I'm a big cold brew fan. It's quite hot here for most of the year and I find cold brew makes a better iced coffee.

I haven't tried the coffeesock though, I just use a French press.

Same here.
Double strength french press on the countertop overnight, press, then in the fridge till it's gone, clean it out and restart the process.
Good enough for me without buying more coffee making gizmos. Way too many already.

Yeah I've tried a french press a few times over the years, but it just isn't for me. For my regular hot coffee I use a glass pour over setup with the stainless filter/paper filter. I used a percolator for years and always liked the results, but the clean up on a perc is just too annoying for me. This new cold brew setup is pretty nice though.

You guys should try Toddy, it's a cold brew method that can be done in pretty much any container. It's best if you have a super fine mesh bag, or a cotton filter of sorts, or the correct setup, for best results. It yields lower acidity than cold press and way more flavor. It's a concentrate that you mix 1 part concentrate to 2, or 3, parts water/mix/anything you'd like. I do it 1 part concentrate and 2 parts mix medium. My wife likes it 1 to 3. I've got tons of recipes for anyone interested.

Procedure:

3/4lb of your favorite coffee, ground for paper filter.

7 cups of water (yeah it seems like very little but this is a concentrate)

18-24 hours of steeping time.

If you're using the setup in the picture you want to get the cotton pad wet, put the plug in the bottom of the container facing down so it can be pulled from the outside(had a friend put it inside once.....), and then add 1 cup of water. Pour 1/3 of the coffee on top of the grounds. Let it sit for 3 minutes. Add 3 more cups of water and then 1/3 more of the grounds. Let it sit for 5 minutes. Add the rest of the coffee and very slowly and gently add 3 more cups of water. This should result in the grounds sitting on the top like a crust almost. The reason this is important is because it stops the filter from becoming clogged, and also mitigates the amount of air that interacts with the oils in the coffee underneath the surface. This results in a richer concentrate. Pull the plug at desired time and drain into a colander/container. I like to use less time for lighter roasts and a long times for darker roasts. Play with it on your own to get it where you'd like though.

For the other methods just fill up your bag/sack/makeshift whatchamacallit, and let it sit like you would cold press. After the desired time remove bag with grounds and strain it through three paper filters stacked together.

Lasts about a month in the fridge either way. Though it never once has made it past a week in my house...

How's the concentrate taste on its own? Would make a nice Wake the F*** Up shot.

I am a coffee nut. I am always looking for something new too try. I figured since we all have such good taste for knives that would carry over to coffee!!!
What are some of your favorite brands/roasts? What do you recommend??

I prefer med-dark roast. I can handle any Sumatra (my favorite) as long as it isn't over roasted like most store bought darks. I like Starbucks Pike's Place roast--Caribou Sumatra--Mississippi MUD dark--and a small St.Louis roaster Thomas Coffee when nothing else is on sale. I know there are a lot of others that I am missing out on. What is a local buy for you that I might not be able to get?

Please list your favorites so I can buy more!!!! :D

Maybe we can get a little "coffee swap" going!!!! HINT HINT!!!

The exchange list.....

Any kind that mixes with cream/milk sugar.

We prefer to drink them now they're already prepackaged from the supermarket mixed in with sugar and cream.

Anybody else remember Coca-Cola Black? Their stab at an energy drink. Was basically just plain old coke mixed with espresso. I loved it, but it was cancelled.

I've found Sumatra cold brew mixed with a bit of brown sugar and Coca-Cola is very close. 2 to 1 ratio of coke and cold brew.

Toddy makes this perfectly with just the concentrate and coke. I flipping loved that stuff. Toddy and coke is a grail drink for those of us who dig that :).
