The grain is brought out with a chromium trioxide and h2o mixture that's quickly wiped on and off, then re-sanded w/ 1000 grit until there's a bit more contrast than just flat Cr03.

off topic, but where do get your chromium trioxide???? i have a rather nice grianed maple table top that i want to "pop" out the grain like your knives....
 
I think I got some condensed Cr03 from knife and gun finishing supplies. It's very brown w/o any additional water. The orange comes out w/ a 4/1 water/Cr03 mix. I imagine it's available from more than one knife making supplier. Good luck.

Got mine today! THANK YOU VERY MUCH Patrick, what a little jewel. I just realized i've been staring at the wood for the last 45 minutes, turing the handle this way and that way. LOVE IT!
