It's always fun to see destructive tests with some knife being used to chop through a brick wall, but as i never use my knives to do that it seems kind of pointless to know how much brick they can eat. Try to break them with simulations of real life stuff and possibly tasks that might come up if confronted with an accident (like smashing windows, cutting and prying laminated glass and doors).
Get a professional lumberjack and have him chop through some really big logs..
Get some bones and some ballistics gel and go "mythbusting"..
Get a fireman and extract someone from a crashed car..
Get a hunter and chop through an elk or two..
Get a doctor and have him simulate surgery with a skelly key..
Get some Cold Steel knives and kill them..
