Just wanted to say that there are traditional folders with 3"+ blades. Look at the T.A.Davison knives - those are amazing. For food prep you probably want thin blade. Not too many knives like that out there. Custom knife could be the way to go. Depends on the budget of course.
 
If you're going to go traditional, and you have a great budget for it, go for a Case/Bose collaboration. These will put you back from $300-400 or more, but you'll only need one, and it will make you happier than a kid in a candy shop. The quality is outstanding. I have a Bose/Case Lanny's clip in chestnut bone, and it's a beauty.
 
Thank you for all the suggestions. So many great options here. I found a benchmade 943 used at a good price so I will try this out. There are others wi will check out later too like the Boker urban trapper for example but not limited to that.

In waist band. Knife between your pants and shirt (assuming its tucked into your pants), and the clip on the outside of your pants under your belt.
 
I also look for black clips, most of my business pants are black with silver standing out.

The inside waist band looks like a great option, will need to try that, thanks!
 
Mini Al Mar Sere 2000 - comes with a deep pocket clip so basically none of the knife rides above the pocket.

Excellent choice. You can easily call or email Benchmade and get a deep carry clip for it, for even more discretion.
 
My choice has been the Spyderco Kiwi when I want discrete. I have the current version and it works very well and is a great little knife.
