I think the difference really lies in how you are "using" it when you take your knife out. If you are playing with it, flipping it open and close open and close open and close. Then that's gonna draw attention. No matter if they're "liberal" or "conservative." Drawing unwanted attention to yourself is party-neutral.
Saying "well, it's a tool" isn't a great comeback. If I was a carpenter and I took my drill out and turned it on and off on and off on and off and my comeback was "well, it's a tool" I would expect to get looks.
Using your knife in public should be fine. That means, opening it, using it and then putting it away or on the table. And if you get looks then just shrug it off. Worrying about what EVERYONE thinks about you all the time is no way to live.
Also, the "sheep" thing is so stupid. It really is. Just because someone doesn't carry a knife doesn't make them a sheep. It also doesn't make you someone I need to rely on just because you have an edged tool.
