Aaron Zimmern from Bizarre Foods on the Travel Channel always had a decent knife on him on his show, from Gerber, to Kershaw to Cold Steel, and I think I even saw a Protech at one point.
He may not be a well-known celebrity, but I think he's cool, and would ask for his autograph, if I met him.

Lemmy from Motorhead was into knives. I think he had a big collection of German WWII knives.
