I live in the Portland, OR area and I have to admit that I found your scenario (minus the gluten free), very appealing. I've been dreaming of building a wood fired, brick pizza oven. . . Wait a second. . . Am I a hipster?!?!?

Only if you feel smug and superior to those around you after having done it...........and make a social media post about it using hashtags like #lumberjackforlife, #lookatme, #iphonesrule, #myvinylcollectionisbetterthanyours, or #manbun.

If you just make a kick ass pizza for you and your friends and enjoy it, than you're good. But invite me over please!

Personally I don't mind if a bunch more people want to carry knives.

If Hipsters want to carry knives, let em. It's a free country. Honestly, I think we'd benefit from knives becoming mainstream. The more people that carry knives, the less we get hassled by sheeple and tightening of laws. I mean if you can make the mainstream public believe knives are a fashion choice instead of a weapon, the better the environment will be for those of us that love knives. Maybe people in New York can truly carry again. That's how I see it. And btw, my skinny jeans can carry any size and weight.

This for the win! I completely agree. If they can make carrying a knife more mainstream, and have people start considering knives to be tools again (and not weapons) then I am all for it.

The thought that a group of people buying a product is going to rid the world of quality knives, one of the worlds oldest tools. Quality knives aren't going anywhere anytime soon. Sure, a bunch of hip, slick, and cool companies might pop up and shovel an overpriced product to fill a niche, but the good guys are still going to be there. They were there long before fads, and they'll be there long after the fads die.
And to an extent, what everyone is complaining about has already been happening for years. Take the Instagram fad for example. Everyone needed the latest and greatest frame lock flipper driving prices through the roof. Now the trend seems to be moving towards traditional knives. Just look at GEC's recent success. There are certain "in" models that are near impossible to get without paying the outrageous secondary prices. All because some Joe Schmoe saw a TC barlow on his friends page and just had to get one. This too shall pass. GEC hasn't gone anywhere and doesn't show any signs of slowing down.
Then there's the Hinderer bubble a couple years ago...
These are just the three most recent examples I can think of.
None of this stuff is new. It's all been done before. Just sit back, relax, and enjoy the show. It's all gonna be alright in the end.

I never understood grown-ass men giving a shit how someone else dresses. More people have a knife - less people ask to borrow a knife - ipso facto I open less stuff for people to avoid them doing something stupid to my edge. Dont care about anyones glasses, beards or how big their earing holes are. (if thats still a thing). Well - I kind of care about my glasses, they've been missing for a few months. I find women more attractive in general without em anyways though. See headlights headed my way - make sure to avoid em.

More people buy knives, more get produced. This is good.
 
The only thing Jackass has right is the pathetic desire among too many knife buyers for social status. The proliferation of pointlessly expensive steels and handle materials in new knives, which add nothing to knife design or fit and finish, is hard to explain otherwise. Take a look at the new and impressive Spyderco catalogue ; there are quite a few knives I like but won't be buying because apparently interesting designs aren't enough for Spyderco and ,presumably, their customers. Knives that could be sold for half the price, are pimped out and offered for sale at a cost that I certainly will not pay...but must make the blingboys happier than pigs in ...[I'll leave the ending to you dear reader]
