This question plagues me quite often and I literally just reevaluated my answer last night by acquiring my grail knife. The answers evolve periodically, but if I had to choose right now:

Fun question and very thought provoking between favorite (tend to be larger and more $) and most carried/used (smaller and less $)

Favorite: Shirogorov F3NS (Black CF)/CRK Sebenza 31 (Burl)/RHK Eklipse (Tanto-Red-SW)/Spyderco GB2 (Black/M4)/RHK Eklipse (Bowie-ODE-SW)

Most Carried (due to work limitations): Spyderco PM3 (S30V)/Enzo Birk 75 (ironwood)/Spyderco Pattadese (m390)/LionSteel BM13UL (burl/m390)/Enzo Birk 75 (carbon fiber)
