Slicing up a sheet of butcher paper.

Smoking a Tri Tip, usually I just do a reverse sear on these and cook to medium-medium rare but they are fantastic smoked as well, they come out moist, tender and flavorful. Wrapping at 165 and will pull with an IT of around 202.
