to be honest I believe that two are a curly maple and the EDC hopefully Eric can help with that. Either way he does an excellent job with his finish work.

I believe the Santoku has curly Tasmanian Blackwood, the gyuto has curly black olive and the EDC is in Karelian birch.

Thanks Robert, I don’t look at the handles when using in the kitchen, the performance is what it’s all about and boy do these preform🤗
Mrs. Cutchu and I went out for some Mexican food last night. The glare I got while taking this pic said it all...
