Recieved this bee-yooty today. A @hellize butcher's cleaver in 0.4inch 5160. The beautifully carved beechwood handle is the right size and shape with which to unleash this powerful blade. It's not light, but it's comfortable and controllable. It's extremely sharp too. It would go through anything on a butcher's block with ease. This is a test piece. I’m thinking it would be cool to have a complete table set of these.

No steak until the weekend though :(.

I’m also interested in seeing if the 420J2 is the supersteel killer an old forum member once claimed it to be. :rolleyes:

Anyhow, a few passes on a Sharpmaker while the steak is resting won’t bother me a bit. :)
 
Here's the new Folding Paring knife from Victorinox, ordered directly from them and pretty much a reverse liner lock (close it the same way as the Compression Lock).

I love the rustic combination of blade finish and those robust pins and handle. Very nice! :thumbsup:
