Yeah, it's more going to be his knife that he can use when he's under my very close supervision. Don't know yet though. He has gotten much better about rules though this year.

I say Smatchet. They are really useful.

An Opinel sounds good! The fact that you have to manually open and close it makes it on the safer side I think. You need a sheepshoot Opiniel, that would be a good kids knife.



I have gotten a ton of grinding done and just cooked a chicken fried steak and gravy from scratch for lunch. :D

I went back to work yesterday after a few days off last week. Had a vasectomy......ugh that was not fun!!!
But I did get about 7 new designs sketched up, my wife thought it was funny I was drawing knives after I just got cut :)

Just got home from work and finished mowing the lawn. It's 68° out, nice breeze and just a damn fine day!


The wife is making a french bread dough right now, it should be all done proofing and baking in about 3 hours! Can't wait!

Just got home from work and finished mowing the lawn. It's 68° out, nice breeze and just a damn fine day!


The wife is making a french bread dough right now, it should be all done proofing and baking in about 3 hours! Can't wait!

Mowing? wow! We're still shoveling... 6 feet of snow just outside of my heat treat shed! lol

You guys should start a bakery! I ran some numbers on what I used to make each day and what it sold for and it was pretty astonishing...






DFK recipe of the day! :D

French bread rocks! I have a really easy method I use...

- mix flour and iced water to a wet bread dough consistency with a pinch of yeast thrown in... sit overnight at room temp

- the next day add more flour and water (double the amount you started) but at a dough consistency.... this easy, just keep adding flour until it is dry. Fold a few times like damascus. :D

- let it sit a few hours, shape (french bread, hamburger buns, pizza dough) , sit again for a few hours and cook... try not to let it dry out while it is sitting (proofing), I use a damp towel


This recipe is pretty cool in that you build a really strong yeast colony overnight... the mixing and shaping the next day pretty much replaces any kneading you need to do. When done well this bread will be very spongy with a thin crisp crust.
 
Daniel, do you use non bleached/bromated AP flour or a higher protein like bread flour? We've had good luck with AP flour, and it's nice and cheap when buying 30# sacks. I think the wife wants to start a sourdough mother yeast next, shouldn't be too much work, just takes about 4-5 days.

Yeah, mowing is year round here, no off season, except summer when water rationing is really serious. Going on 4 years into this drought now. :/

Working the late shift today and tomorrow, then I'm off and hopefully get to take the boy fishing for the first time!

FWIW - I've had the best luck with an unbleached general purpose flour, rather than a specific bread flour. King Arthur is my go-to.
 
King Arthur AP flour is a really good one that is a little higher in protein anyways. It's a good choice!

Funny you should ask. We're making 3 inch wide chisel blade for air chisels right now. Looks like a thick scraper blade.
 
I'm doing it... I'm selling.. my first DFK ever..

The only damascus DFK knife I own... I'M SORRY DANIEL!

I've stared at this knife for a long time.. and I have many DFKS... but I'm more of a big knife guy and a titanium knife kind of guy...

So, I offered it to someone that is a DFK'er and he would like it. I'm selling at a decent price to pass on the kindness :)
