Here are my go to knives for hunting and the outdoors. The F1 and the Queen 4190 are the two I've used the most for skinning deer and hogs, and aoudads. The Gravelle is a bit big for skinning, but works well for wood craft. The Essee 4 and the Wilson I just recently got, and haven't used for skinning just yet. But, judging by their shape and size they should work well. Both are in 1095, so probably will do well for the outdoors.
Here is an average load of hogs after running a couple traps. The Queen D2 works well skinning hogs, and typically will not need a touch up until after several hogs are skinned.

The dog is Lexi, our Australian shepherd wonder dog, slayer of squirrels and rodents. So far I still have all my fingers. But, the sharks can get a little testy. So attention to distance from teeth has to be kept in mind.
