Favorite hunting knife?

My buddy uses a really nice old school shaving straight razor when he field dresses game, skins, butchers and other stuff. I used to gust his balls all the time and ask him if he needed a hot towel before he shaved his deer and stuff like that. But man I used it one time after he told me to just try it, and that thing really did chop that deer up like a hot knife threw butter. It is great for slicing with nice smooth control especially on smaller animals, and with large animals you don't need to worry about hitting organs or anything when gutting. Don't get me wrong I still bust him about it everything we go hunting together but really it is a nice little hunting knife and you get really good control with your slicing. I was thinking maybe one of the ones with the replaceable straight blades would be nice haha, use it till its dull and put a new blade in it LOL.
 
got a new 'favorite' in the mail today. S30V steel, camel bone scales. Maker is Tim Olt, out of Michigan. Blade is 3 1/4 inches, with a little swedge up top, and some nicely done jimping on the spine.
 
I am not familiar with these birds. What are they??

They are european black grouse, widespread and common in scandinavia and Russia and some other places in northern Europe. Theese are male birds and you can tell they have been hunted in the spring by the size of the red eye brows. To the best of my knowledge, spring hunting is only possible in Russia, but autumn hunting is possible even in Scandinavian countries. Great sporting gamebirds and tasty meals.

Btw, the dog is a german wire-haired pointer. I have 3 of those myself. Superb allround hunting dogs.

I've hunted over short haired and wire haired pointers(uncles) but prefer labs myself. Made for good natured arguments between us. Just put down my 13 year old Chocolate lab 3 days ago. He will be missed.

That is a great looking knife. I have seen a few knives lately with green Camel bone, and I really like it. A lot

I've been using a David Farmer custom drop point in L6 for the last few years and love it, but am gonna try a new stainless supersteel this year,
a Spyderco South Fork in CPM-S90V. It sure feels good in the hand.

These birds are called black grouse. Taste them again. About one day need to marinate, better in dry wine. After that it will be more or less acceptable taste. However, in the Internet there is a lot of recipes for these birds, another question is that they are difficult to obtain :))))
 
Southfork good, no doubt, but for a delicate cutting reduced thick, 0.5 is the lot. It would be 0,2 - 0,3 very good. And heat treatment of steel seemed weak, did reconditioned .

Actually, we, in Russia, I have found a wonderful knife of steel Vancron 40, this is the first time in my many years of practice, knife, which keeps sharpening like razor very, very long time...
