Favorite Kitchen/Utility Knife?

David1967: Nice. I have one of Rob's original Talonite Cetans and it's nice but the blade thickness is a little much for good slicing. I like the TTTKK 1/8" blade better. In fact, I've always wanted a Talonite fixer in 1/8" configuration.

Joe: Yeah, you guys did good on this one. I've been corresponding with Trace. I think your suggestions on the belly and bird's head handle are sound.

 
Interesting topic this. I've found quite a few relativly cheap kitchen knives I own will do good service at work and as defensive weapons should the need arise. considering the number of people who meet their end due to kitchen knives each year, they are probably just as effective as an expensive custom defensive blade.

 
Hello jacknife and welcome to these forums! I actually couldn't agree with you more. I read somewhere that the most deaths that occur with knives, (self defense and otherwise and what a terrible thought), were accomplished with common kitchen knives more than any other type. I also agree that my old Chicago Cutlery and other kitchen knives, could in a pinch, be used as very decent utility knives. BUT, we "knife knuts" are a hard bunch to understand sometimes, but a wonderful breed. We love a nice comfortable, eye-pleasing piece of steel. There's just something about a hand-crafted knife, used as intended, that is just plain marvelous. I understand your reasoning but wanted to give you a real knife "lover's" view. It truly is beyond reason.

I too love a well crafted knife Gene and I can understand just the way you feel, it's the same feeling I get myself. Over here in the UK it's harder to find custom knives and I wanted to say that you can enjoy using kitchen knives, not just in the kitchen. I love my knives as you do Gene, guess that makes me a "knife knut" too. My problem is I hate to mess up a "good" knife,
so I end up carrying some old thing about with me. Anyone know how to cure this ?

I know what you mean. It's hard to use those "beauties". Sometimes you just have to force yourself though. The only cure I know of is you get one, then another, then another, then another...

Thanks for the "knut" compliment Gene, and for the advice as to how to conquer my problem. Well I'm going to try it. I use a knife every day in my work and at home and I'm going to get some of the good stuff out and use it. Thanks Gene.
