Gaucho knives and cuchillos criollos of South America

Hey folks, have I mentioned before how much I love my Verijero? ☺️

Things I like about it:

Well balanced.
Very comfortable in the hand, good ergonomics, no hot spots.
Beautiful lines
When holding it you are automatically aware of where the tip is even without looking at it.

The half moon cutout or notch, typical of criollo knives, is a great feature :thumbsup:

It not only acts a comfortable finger guard but it also, in combination with the shape of the handle causes the knife to literally "stick" to your hand, always keeping its cutting position :thumbsup: ( see video below )
You are able to relax your grip in between cuts and the knife does not move.
I am so used to the feeling of the knife being "glued" to my hand that I find some of my fix blades lacking now.

Here in hand is my new Puñal Criollo from maxipescie maxipescie ( I think that this blade is correctly identified by that name.)

A 10.5" blade in 1070 still with a stag antler handle.
Quite a handful of beauty! Thank you Maxi it is as perfect as I had hoped.

This won't be a boat knife ;) but will find its way full time in the kitchen. Get to toss out a couple of knife pretenders.👍

I thought you were going to bear the wait with me RayseM RayseM ! I haven't received mine yet, I think a gaucho is going to hand deliver it since I haven't received any shipping updates since last week.

Beautiful knife. Did you say a 10.5" kitchen knife? I use one 8.25" and that might be pushing it. I don't think I have the skill to wield a 10.5".

What do you use to cut PIZZA - an 8.25" knife? :rolleyes: I'm not a chef but I will certainly find things to slice or open with this one. Has enough heft and length to cleave a squash with ease. Always a useful purpose.:thumbsup:

I'm not a fan of homemade pizza. I can never get the crust right. Plus we have plenty of great pizza joints around here, I don't bother since mine can't compare.

Such a big knife could prove useful with watermelons though.

So there was no wind today for this gaucho to sail in the vast watery pampas so off fishing he went with his beloved Verijero on the last day of his solo adventure :)

Never again will l use the the fillet knife for those hard cuts behind the head. It just dulls them so fast and then they are not that good at what they are meant to do ... mainly fillet since they are fillet knives after all.

Verijero made all those "head" cuts with incredible ease and stayed sharp throughout :thumbsup:

I had a 12" Wenger that I gave to the farm for watermelon. (I don't know what else they do with it, but it needs sharpening sometimes.)
It might have been too big for my skills, but it was definitely too big for my kitchen. My thin, 8" Copco is what I usually reach for, what with my elbowroom, counter space, and solitude.

This one doesn't want to be bothered unless there's some major meat on a spit.
