Gaucho knives and cuchillos criollos of South America

I thought you were going to bear the wait with me RayseM RayseM ! I haven't received mine yet, I think a gaucho is going to hand deliver it since I haven't received any shipping updates since last week.

Beautiful knife. Did you say a 10.5" kitchen knife? I use one 8.25" and that might be pushing it. I don't think I have the skill to wield a 10.5".
I am still waiting with you, we will see whose arrives first.

I have been keeping an eye on the “walk in nature” thread, and literally just a few minutes ago was thinking of how proud I was of you for devoting this entire trip to spending quality time with your wife, and not letting yourself get distracted posting knife pictures 🤣🤣 Still, a couple of posts in 7 days can be overlooked:thumbsup:

I just put a bunch of pics on the nature thread however I am SO tired that I wonder if some of it even makes sense lol
We arrived safe and sound and getting ready to sleep in a real bed after 9 nights aboard Serena.
I have not taken even taken a shower yet as I felt I needed to post on the Porch first 😁

My mouth is watering, Dan. I love fried fish! Also, the steaks you make.
By the way, I ordered me a verijero. What an enabler you are!
 
What a lovely piece of steel. Not as small as CelloDan CelloDan 's or as long as RayseM RayseM 's this verijero splits the difference with a ~ 7.25" blade.

Maxi gave the blade assymetrical swedges. I wonder why that was?

I bought a new sharpening stone to keep my cuchillo criollo sharp. It's the size of a brick. I was inspired by Hector Casales. Now I can maintain my knife like a proper gaucho.

It is a great size Prester John Prester John . I was afraid I should have ordered a longer blade, but now that I have it in hand it's just right.
It looks great! By the way, I think Dan's knife also has asymetrical swedges. Looks good to me. I had trouble deciding on a size myself, but figured the 12cm verijero would be more portable, and the blade is bigger than my laguiole. Looking forward to more pics, with patina!
 
Very very nice Christian. Are you taking this one in the field?

BTW - me too with the asymmetry - off about 3/4". It's MAXI's thing or a feature of these style knives by tradition?
Will need to look more closely at others.

That was one of the first things I noticed when I unpacked mine.

I right away communicated with Maxi and he put my “symmetrical” mind at ease lol 😎

He told me it is generally a feature of the knives ( he of course would do symmetrical as well if requested )

The asymmetrical look right away grew on me 👍
Now when thinking about it an even treatment to the swedges would look rather bland to me.

Does Maxi have no story for why the asymmetrical swedges are standard?
My indirect benefactor didn't get the memo. Slight swedge on one side. But mine is thinner than a lot of these, I think.
