Beautiful knife. Did you say a 10.5" kitchen knife? I use one 8.25" and that might be pushing it. I don't think I have the skill to wield a 10.5".

I bought a new sharpening stone to keep my cuchillo criollo sharp. It's the size of a brick. I was inspired by Hector Casales. Now I can maintain my knife like a proper gaucho.

It looks great! By the way, I think Dan's knife also has asymetrical swedges. Looks good to me. I had trouble deciding on a size myself, but figured the 12cm verijero would be more portable, and the blade is bigger than my laguiole. Looking forward to more pics, with patina!It is a great size

That was one of the first things I noticed when I unpacked mine.
I right away communicated with Maxi and he put my “symmetrical” mind at ease lol
He told me it is generally a feature of the knives ( he of course would do symmetrical as well if requested )
The asymmetrical look right away grew on me
Now when thinking about it an even treatment to the swedges would look rather bland to me.
