These threads are a real class act Mike, both interesting and very generous. This is not an entry, I've received plenty of kindness lately already, but I think I'll go with ebony and antique yellow jigged bone.
 
While I really like wood (especially a nice dark wood, like ebony or blackwood), I'm partial to micarta. Any chance of micarta slabs?

For wood, I would have to say desert ironwood. I have had a few knives with ironwood scales, and desert ironwood has to be it for sheer beauty and durability. My non user spear point Charlow has a really nice lighter shade of ebony with some neat patterns to it, and the gunstock walnut on the sheepsfoot Charlow I just got looks great, but nothing can take the spotlight away from desert ironwood.

For bone scales, I will go with the scales that are on the Bladeforums 2012 forum knife, the one with the wharncliff/clip point blade. I have that same material on a 48 single blade trapper, and it looks good!
 
Bone: chestnut bone that was on the recent muskrat (looks like brown Rogers bone)

Wood: ironwood
 
Wood - maple burl (like the most recent GEC congress)
bone - smooth bone. (almost) Any color will do.
 
Ebony for wood (with African Blackwood being even better).
Autumn Gold Jigged Bone for the bone. Love that bone on my 55.

Ebony for wood..... and how about the Antique Green like on the Eureka Jacks for the bone?
