I could recommend just about every movie I have seen mentioned here thus far

For knife/fighting action: The Hunted, Kill Bill.
For a little bit of everything: Punk Drunk Love. Easily Adam Sandlers best movie, and not done in his typical style.
Feel good, nostalgic: The Sandlot, or any Pixar movie
Random: Brick, Jackie Brown
 
Knife fighting and all around awesome movie= V for Vendetta

If anyone likes movie knife fights, you owe it to yourself to check out The Man From Nowhere (mentioned by the OP). IMO, the end fight scene has the best cinematic knife fight I've ever seen, and I've seen a lot of them. It's a very good Korean film.

The Raid: Redemption is a great movie. I saw it a few months ago in the theater. I heard that only the blu-ray version has the original soundtrack, though. I hope not, as I don't have a blu-ray player.

Just watched Mad Max II and noticed that Mel's personal blade appears to be a Gerber Mark II dagger which he uses twice early in the film.
 
Try Reindeer Games with Ben Afflac. Great Thriller.
Or for kind of a chick flick, Bridesmaids. Funniest movie ive ever scene.

I just saw Cabin in the Woods and thought it was great. Not what I was expecting, and one of the characters was annoying, but still a really good movie.

For older westerns The Scalphunters was really a really good watch. Burt Lancaster, Ozzie Davis, Telly Savalis, and Shelly Winters.
 
-Moon it was fairly good. I rate it as a good B Scifi movie.

-Brazil if you have not seen this movie you have not lived...thats all I'll say :)

The Gerber Mark II knife was also used by Bishop in Aliens, where he does the knife trick on Bill Paxton's hand.
