Grail is an over used term.

My personal definition of a "Grail" knife, is generally one that is hard to get; either because a few were made etc., and is generally NOT a PRODUCTION knife. I just feel the term is way, way over used.

Absolutely agree. To me my 'grail knife' would be one that I couldn't possibly imagine owning.
 
I think most just use it synonymously as "hard to find/acquire".Some production knives are very limited(sprint runs & LE's),& harder to acquire than some customs.
I think it can apply to custom as well as production knives.One person's personal grail is just that.
 
I always thought it should be a knife that looks like a cup...

I disagree on the "production" part. IMHO a grail knife could be knife perfection for the particular owner/user. It might be a common pattern that just happens to be perfect for the user's needs and/or have above average fit and finish for that particular production model.
I do agree it's an over used term because this months grail knife could be next months knife for sale for most of us knife nuts.

Can a limited edition production knife not be a "grail" knife? Hope not because a 25th anniversary Spyderco Delica is my personal "holy grail." :D I could kick myself for not buying one back when I had the chance. (for $275)

I personally don't believe in grail pieces, because soon as it is attained something else becomes a grail piece.
 
My thought is that like the "holy grail", there can only truly be one. It should be the last knife of a specific style that a person will ever buy, and once the "grail" knife is acquired, all other knives of similar style should be liquidated.

Not that it matters, but TKC is a female.

I would say that she has a grasp on a realm of knives you couldn't even imagine, therefore her opinion on this matter is founded in more fact than not.
 
Playing devil's advocate: Suppose someone is in a situation where a particular production knife isn't within one's budget, like say a regular Large Sebenza. If that knife is the only knife that this person wants or cares about and due to the knife being out of the budget, might we consider that a "grail" for that person? It's not so much that it's difficult in general to acquire, but that it's incredibly difficult for this particular person to acquire and it happens to be the knife (or general model) that the person wants more than any other knife.
