These loaves came out of the oven a couple hours ago.
I am enjoying the learning process too .... and tasting it
Finally I was able to get a more open crumb structure. Started the the process yesterday morning, in the fridge overnight and baked this am.
Very mild sour flavor, we shall see the verdict from the family

It’s actually “Chili Dog Patina”!
Last Saturday when we went shopping at Sam’s Club we purchased a large package of 1/4 lb Beef Franks. They are the same ones they serve in their snack bar. Sunday evening we fixed up a couple and opened a can of store bought Chili. By the time I got the mustard and chili on mine there was no way I could hold it and eat it like a normal hotdog!
Sooo I used my trusty Stag Bigun and a fork to eat it with!

Usually I have yogurt for breakfast, but decided to have a special treat today. Left over sourdough bread, toasted with cheddar, wrapping a fried egg. Cold-brew to wash it down.

Chili Dog Patina!Chili dog patina is the best kind of patina!I have that same problem when I make chili dogs at home; they’re always a fork-and-knife kind of deal.
And while they’re good at home, I don’t think anything quite compares to a chili cheese dog from a drive-in/malt shop type place.
No breakfast chili dog for me today, just a fried egg and bacon sandwich. Have a good day, Guardians!

Why do new knives with lots of blade etches or advertisements look tacky to me, but I absolutely love them on antiques? It must be some form of nostalgia.
It's not logical, but yeah.
I can't stand etches, but I enjoy stamped blades. Perhaps it's as simple as -
Stampings = Good
Etchings = Bad
???
