Hats off................to Opinel

I can't compare with Hellman's or Duke's but i strongly advise Chui Chui to give the Maille mayonnaise a try. Way better.
Let alone the one i make.

Are you kidding ? Shrimp without mayonnaise ? Never !

Dan.
- sure, will give Maille a try

When does [do?] grits become polenta?

Shrimp and grits is a great dish!

(Never heard of shrimp and mayonnaise either!)
Grits becomes polenta when served in an Italian restaurant. :) I get grits and polenta from a farm in MO. When questioned I was told both use the same corn but polenta is a slightly different grind.

Nobody's ever mistaken me for a gourmet & I suppose it's because of where I live, but outside of shrimp salad, in my 75 years I've never heard of shrimp & mayonnaise. Around here it's always been Old Bay, and cocktail sauce.:)
And a pic of Opie #07:

Yes, No mayo on shrimp! Old Bay yes!

As far as Mayo, Im a big Dukes fan after being in Florida for 20 years, up North Hellmans is the deal

Grits are made from nixtamalized corn (hominy). It's processed through lime water. I learned this when trying to make my own and never did do it. Just seemed like something I shouldn't try on the fly!

Polenta is plain ground cornmeal. I like to use very course ground and form it into loaf pans before it cools. So good. Just slice and go!

Not all grits are made from hominy only hominy grits. The place I get grits from doesn’t do hominy. They are in the MO Bootheel. Just like some people don’t set up polenta in pans, but serve it like southern grits. Either way, I like it 😀

Me too! In whatever form it comes in.

I'm about as northeastern as they come and didn't know there were other kinds of grits! I'll check it aht!

I never had grits till I was 30 and on my honeymoon. I grew up eating refried beans and homemade tortillas, and my wife grew up with biscuits and gravy, and grits. I like them. Sometimes I make garlic cheese grits for my wife. I put butter, cream, salt, pepper, cayenne pepper, garlic, and grated cheddar cheese. Served with bacon and eggs. And coffee and mimosas!

I have carried opinels off and on over the last 10-15 yrs. They are affordable to a fault, and cut like none other, so easy to sharpen and take a scary sharp edge quickly. I love using them, but I don’t care as much for carrying them, they feel big in the pocket which bothers me moreso than a flatter knife.
However, if I could only carry an opinel for life I wouldn’t feel lacking for anything and would get used to the pocket bulge after a while.
I like them so much I bought the box set with all the sizes, I don’t use any of those, just have them to admire, plenty of others I do carry and use.

I need to pick up a model with fancy wood next. I did buy the utility model with the bits in the handle and wire stripper notches, it’s a nice model, but the notches sacrifice too much blade length IMO and it’s a pocket hog. They should have put only one wire stripper notch instead of two, I strip a fair amount of wire and don’t see the usefulness of the triangle shaped notch.

Agree. Big fan of Opinels. I love using them, I actually enjoy the light weight carrying them, but the round handle isn’t my favorite in the pocket. I’ve considered flattening out the handle by removing material but I’ve never done it.

A couple of No.6. One I sanded with 80 grit. It took about half an hour. The other i used my seahorse whittler. It took a little longer because I had to reshape the blade so that the tip would be covered.
