Help me decide which AFFORDABLE knife to buy please!

any that really stand out to you that might be of my interest? would appreciate any names you could throw my way dude :)

I'd definitely suggest Kershaw knives, Cryo, Leek, lots of awesome budget knives from the. Ontario RAT I or II. Spyderco Tenacious line, and the UKPK. Just a few suggestions :)
 
This is going to sound a little rude, but if $40 bucks is a budget buster for you then you really shouldn't be buying a knife at all.

However, I would personally recommend a kershaw skyline or a spyderco tenacious over an ontario rat 1. I have bought all three recently and the rat 1 is in third place, in my opinion. It is a good quality knife, I really have no complaints aside from the fact that it is a tad thick to carry, it is heavier than the other two, and you don't get that much more blade for the trouble. The skyline is my personal preference. For me the rat 1 will be a backup in my hunting pack or camping pack.

we all gotta start somewhere man, and for me I think going for an affordable option first will help me value having a knife before buying a really expensive one.

That's quite snobby. Lots of people need knives but can't afford the standard fare here. I've recommended my share of budget knives to a lot of people here. They are satisfied with them.

Take a classic; 440c for example, one company can make it at 0.95% carbon and 16% chromium, another factory can make it at 1.2% carbon and 18% chromium... Provided the other ingredients are right, Both would test and qualify as 440c, both would would make knives stamped as 440c. But the two would perform differently... Many of your basic steels have thresholds similar. Then consider heat treatments, purity of process, where the iron is from can even theoretically make a difference (due to natural impurities, considered a large part why Swedish steel earned a reputation was natural occuring alloys in their iron, creating a better quality steel in the days long before sophisticated science started making complex alloys)... In short, two steels, labeled as the same steel, but from two different sources and manufactures, will not necessarily perform identically... Just like your wife's carrot cake may not be as good as your grandmommas, even if your wife followed your grandmommas recipe... There are a lot of out lying variables.
