Yes, I see that some of these knives have changed hands over the years. The second "Our Best" knife you've posted I may have brought to the Oregon show about twenty something years ago. I always kicked myself for letting that one go.

That's when I turned my focus to Henckels. The one next to the folding guard with the threaded bolsters looks early. What do you think? Pre 1890?

Both, on the life style question. I found an interesting article about the trade war between Britain and Germany in the 1800's. It seems that by the end of that century Germany had hit their stride with quality, but before that for decades it was Britain all the way. There was definitely major competition between Sheffield and Solingen.
