It's going to be interesting to see how demand and shop capacity match up. I can imagine only a few dozen of some models being ordered, and a few hundred of the more popular ones. It'll be interesting juggling.

as far as the sheath goes, the link on the busse site that was present previously during the new line simply gave examples of several of the sheath makers that busse had information for. I beleive the basic protocol was to state within your busse order who you would like to have your sheath made by, and busse would send it to that sheath maker directly before it was sent to you.
However, I have never personally done this, so I am not sure how exactly the process works.
Because busse combat does not have any of these sheath makers under its payroll, all deals are essentially done third party, with busse acting as either a partial fascilitator, or a at least a method of transport to/for the deal.
