I've owned both....just traded back into a Hinderer XM-18 3.5 slicer/flipper.......and for me it's the Hinderer. Don't get me wrong, the Seb was a beautiful, practical and bomb-proof knife but the ergos just never seemed to work for me. I recently re-examined the Seb and the traditional late lock-up became another factor that pushed me to the XM. I imagine the Seb to be a better kitchen tool....though the Hinderer will work just fine.....but the Hinderer's ergos just have the "feel" for me.
