Here's my Esky. Its had a couple different looks so far.
I started out with a nice cord wrap which was comfy in the hand, but just absorbed too much crap. Fat, catfish guts, grease; just got too nasty to deal with. Then was gifted an awsome set of Izula slabs and have been loving it!

I put this wrap on shortly after I got it. I like the strider-type wrap because if I should need the cord for something, it comes off quick. I also don't gut the cord, so it's got some meat to the grip if I need to do some serious cutting or batoning.

Handle wraps? Don't need on stinkin' handle wraps.

While paracord handle wraps look great (and there are some extremely well done examples in this thread) they are a magnet for dirt, slime, crud and all sorts of nasty things that inhabit the real world. I prefer my skeleton knives nekked.

Here's one reason. I do a lot of fishing, and it's a dirty, slimy activity. A paracord wrap would last about one trip before it got too funky and would need replacement. Note the handle of my BK-14 poking up just above the dorsal fin of the nice rainbow I caught yesterday (Yeah, yeah, I know. It's a gratuitous bragging rights picture, but it does help prove the point):

No worries about the metal handle getting too funky to bring back into the house, and when it does get yukky and slimy I just dunk it in the river (in this case the Toccoa in North Georgia) and it's all fresh again!

I food prep with my bk-14 all the time. I haven't had a problem with dirty paracord yet, just wash the blade and it's good to go again. The nylon washes off reasonably well. However, I do keep my remora's unwrapped, they'd be my first choice for cleaning fish or small game. I'd have a similar worry about micarta. Anyone know how it cleans up? I have it on my 10, but havn't really put the 10 through it's paces yet...
 
My Beckers are just tools, so I really don't care how dirty the handles get.

I don't wash my screwdrivers either.:eek::D (I guess if it got covered in fish guts, I would wipe it down though):D
