How overbuilt is too overbuilt?

Very few stainless steel have the toughness of carbon steels. Even the toughest stainless steel (stuff like INFI and Elmax) only have toughness equivalent to a moderate toughness carbon steel, they just require a lot less maintenance from corrosion resistance.

INFI is not a stainless steel and is considered by many to be one of the more tough steels out there. Not even comparable to elmax which is a stainless steel. I think you meant something else.
 
I think a knife can be overbuilt for a particular task but I have nothing against them.

I carried a Case Canoe for the majority of my life so pretty much every modern folder I own could be considered overbuilt I guess.

I remember a thread where someone asks, "What's your top 3 folders?" I listed my GB1 and two 940 models. Someone replied, "Since you're into small folders, you should look at knife model X."
I thought, "Wow, the 940 is now considered a small knife?"
Different times.

Knives for everyone. It a great time for knife knuts. Even "overbuilt" ones.
