Great post, I appreciate you taking time to contribute.
Take an 8" paper plate and a 1.5" wide ruler
Hold the plate up with your left hand like a steering wheel in a car and take the ruler and hold it @ 3 o clock.
Hold the ruler "level with the world" and move it slowly up and down from about 2 to 4
Closely observe the angle interface as you make vertical movements with the ruler.
You want the wheel to make initial contact about 1/3 up the blade preferably. It is more a matter of height in relation to the wheel than angle.
I simply angle my plates to relieve neck strain, minimize carpal tunnel and increase ergonomics

Thank you for the reply, a lot more research before I grind my first piece of steel! It may be awhile, I have a ton(literally) of summer sausage and snack sticks to make. Ham season as well. I will eventually get to make something though!
