But id like to know what you put in chili.
Google MacLeid's Rockcastle Chili. It's seriously amazing chili, especially over a camp fire. However the one thing I do differently is I add chunk/sliced polish sausage about an hour before it's done. Don't know WHY but growing up chili always had polish sausage in it and I still do it.

I agree with Greg, most places wayyyy overcook their ribs and pork butts til they're like mush :thumbdn: That's not necessary at all. Luckily there are a bunch of places around Knoxville that do 'em up pretty dang good. When Gus and Christine were here we got some BBQ from a tiny little place called M&M. They don't even have a seating area, you just pick up the food and bring it home or go on a picnic.



I dunno what's up with that, I posted some pics in my forum yesterday and it worked fine, but I was linking them from tumblr.

Man, that food was delicious!
 
Right now Im doing algebra, English, art and speech no fun classes yet.

Algebra was always easy. Last year I had an "A" during both semesters, but I completely bombed the finals. The first one I got a 59% the second 50%. I couldn't even begin to describe how pissed I was when my grade dropped from an A to a C.
 
I don't even like spaghetti noodles in spaghetti. We use shells with our tomato/meat sauce.
 
Chili doesn't have spaghetti in it either, unless your in Indiana, then its chilimac ? Ew

A good rigatoni noodle with sauce is good, I don't like spaghetti in tomato sauce however a good fettuccini in a rose or vodka sauce is great!

That's the plan. I have a couple CS hawks and I like the weight and performance of them and 'hawks in general, but they'd be better off it they shipped them unassembled since they're practically a hawk kit anyway. They just really need a lot of work before you can use them. Not really a bad thing since they're like $35 and then you can customize as you go, but I don't have a need to tinker with every piece of gear I get before I can use it. I'd prefer something I can use and see what adjustments I would like to make.


Then why is it called chili con carne. Chili without carne (meat) is what?

You guys ever had green chili? I never even heard of the stuff until I moved to Colorado. In Pueblo the big thing is to take a cheesburger and drown it in green chili, they call it a slopper and it's GOOOOOOOOOOD. If ya'll ever make it down this way swing by Gray's Coors Tavern on 4th downtown and get a slopper. Good stuff.

Telling a Texan how to make chili is like telling an Italian how to make pasta. Sure you CAN do it, however you will have no credibility or respect from them.

Sorry Doc, you lost all chili credibility when you mentioned Florida, lol.. Truth be told, my favorite chili and what i would consider chili proper is venison and couple dried chili pods..

I have to admit I have had good chili with beans before.. but proper chili is no beans. all that being said. don't even get me started on the sauce or no sauce on brisket debate ;)
 
In Brazil, they make something called feijoada.....black beans and LOTS of pork products. It's like chili, only yummier ;). I grew up in a little 'burb of Rochester, NY, named Chili. It's pronounced chy-ly (both long "i" ). Seemed normal growing up. Mostly ethnic neighbors of the Italian variety..... so not much chili in Chili. But the pizza? Magic.
 
Frankly, as long as it tastes good, I don't care what you call it. I've had plenty of bad food in Texas, along with some phenomenal meals.

However.

Chile is not a pepper, unless you're speaking Spanish. In which case, it can refer to ANY food that contains a chili pepper of some variety, a lie, or a male genital organ (I kid you not). If you're speaking English, I don't care what state you're in, it has but one definition, and that's the geographical name of a South American country. Chili and chile are not the same things unless you're speaking in a foreign language.

Depends on where you're standing...the spelling seems to be colloquial in use.
