Telling a Texan how to make chili is like...
Google MacLeid's Rockcastle Chili. It's seriously amazing chili, especially over a camp fire. However the one thing I do differently is I add chunk/sliced polish sausage about an hour before it's done. Don't know WHY but growing up chili always had polish sausage in it and I still do it.But id like to know what you put in chili.
This also is very true!... teaching a pig to sing. It wastes your time and annoys the pig.

I agree with Greg, most places wayyyy overcook their ribs and pork butts til they're like mush :thumbdn: That's not necessary at all. Luckily there are a bunch of places around Knoxville that do 'em up pretty dang good. When Gus and Christine were here we got some BBQ from a tiny little place called M&M. They don't even have a seating area, you just pick up the food and bring it home or go on a picnic.
I dunno what's up with that, I posted some pics in my forum yesterday and it worked fine, but I was linking them from tumblr.

A good rigatoni noodle with sauce is good, I don't like spaghetti in tomato sauce however a good fettuccini in a rose or vodka sauce is great!I don't even like spaghetti noodles in spaghetti. We use shells with our tomato/meat sauce.

Frankly, as long as it tastes good, I don't care what you call it. I've had plenty of bad food in Texas, along with some phenomenal meals.
However.
Chile is not a pepper, unless you're speaking Spanish. In which case, it can refer to ANY food that contains a chili pepper of some variety, a lie, or a male genital organ (I kid you not). If you're speaking English, I don't care what state you're in, it has but one definition, and that's the geographical name of a South American country. Chili and chile are not the same things unless you're speaking in a foreign language.
