Because it isn't a written language. With English when you write it, it goes left to right and follows a path. However with sign language it doesn't follow that same flow pattern you actually set things up in space.
I don't know if that actually makes sense. It's easier to describe in person when it can be shown.
So, lets see if I can Star Trek this for a moment. You are indicating that sign language is three dimensional writing, on a vertical plane moving forward and backward through space? Whereas physical writing, with an instrument, is two dimensional on a horizontal plane moving left to right, or right to left if you are arabic (lol)?
