If the lock mechanism on my pocket knife breaks or fails while using the knife will my fingers be cut off?

No. He's probably just pulling your leg. It's pretty difficult to cut your fingers off just with the knife closing on your fingers. The blade has to go through bone. If it gets you right in between a joint it might give you a serious cut, but even then having your finger completely cut off will be unlikely

Would the blade usually fold anyways if you were putting the pressure while cutting on the edge of the blade? Cutting away from your body.

Highly unlikely. Look at the design of a folding knife. There's usually a bar running across the frame that stops the back of the blade in position when it locks. If you put pressure on the edge of the blade and somehow break that bar (highly unlikely, unless if you're abusing the knife), then all the blade will do is bend backwards, but it won't cut you
