I've been there and I can tell you that "just one watch" just doesn't work for me. I can't do "just one knife" either.

I wore a Rolex Sub for about 10 years but I was still always looking with interest at other watches. I finally discovered that it was ok to have other watches and wear them sometimes instead of the Rolex, even if the other watches were much less expensive. Well I don't have the Rolex anymore but I do have a small collection of less expensive watches that I wear- Seikos and others. I have an older Omega Seamaster and IF I was going to do the "just one watch" thing it might be the one. Today I'm wearing a Seiko Sumo and it would certainly be a good watch if I had to live with it and none other.
 
The only way I could get by with one watch is if there was a way to avoid putting ugly scratches in the face. Yeah, I know, situational awareness, but these things happen.

I've seen watches with metal covers that flip up (wristwatches, mind you, not pocket watches; I've got enough junk holding down my jeans), but I've never seen one up close.

Yeah, once you got me thinking about it, I did an image search. I geek on anything Steampunk, and, sure enough, there's a Steampunk watch. Except they call it an "Entropy Calculator", which just makes me want it more.

Charlie Mike, How are you liking your Hamilton? I have had 46MM pilot for a little bit now and I have to say, I really like it. Great bang for your buck! And to answer your question, I would be satisfied with a speedmaster pro. Although I would prefer sapphire sandwich, i would be happy with hesalite. So classic and timeless (in a good way;) .

Ended up buying something with twice the water resistance. 100 meters just didn't do it for me.

I used to switch watches all the time, but about a year ago I fell in love with the Seiko Orange Monster. Got one as a late Christmas present early this year, and have worn it every day since. Band and bezel are getting some scratches, but the face is still pristine thankfully. I have considered getting a Black Monster to have a slightly more subtle alternative, but feel no rush at all.

OMG! That is THE watch I would own if I could have any watch made. I've lusted for one for year's. Understated perfection. I have a Ventura designs titanium I bought when they first came out because of the simple design. Maybe some day a Luminor.

The "one watch nirvana" thing is sort of a joke among watch collectors, none of them would be able to live with just one watch. I find the same thing with knives, I couldn't possibly restrict myself to just one knife.
I have a lot of watches and rotate through a group of them, changing once a week. By strange coincidence I'm wearing my Orange Seiko Sumo today in honor of Thanksgiving colors, I seemed to have been wearing the black version when I posted before in this thread.

The black Seiko Sumo would be a good watch if I happened to be stuck with only one, but the favorite in my collection is the blue dial Omega 2255 Seamaster.

My Sinn 656 is ever present on my wrist, coincidently it had it's tune up at RGM, dropped it off there & picked it up as well, nice folks there

I'd get myself a calculator watch. I haven't had a cell phone in over 2 years (so no calculator) and I am horrible at math.

I've wanted an Automatic for some time now. I've resisted the urge to get into watch collecting (I have enough expensive hobbies as it is).

But I have looked around a bit. A Seiko Monster would be more than enough for me.
