If you had to pick one Victorinox, which one would it be?

You don't have to pick just one. Problem solved.

But, if you ask me which one I pick first? It's going to be the Rambler 99 times out of 100, because it does 99% of what I need to do in my life.

I have to agree. Rambler is my go to EDC
 
While I was in the army I often carried a Vic pioneer in my back pocket, and nowadays I most often carry a tinker in my back pocket. Buuuuuuut if I was only allow one for the rest of my life, neither of those would realistically make the cut, most likely I would pick a huntsman. The pioneer and the tinker tend to be backup knives because they are thinner and the huntsman comes out when I go camping and other activities.
 
If I could only have one it would be a Fieldmaster. I usually carry a small set of pliers with my sak and the Fieldmaster along with the pliers has everything I need and nothing I don’t.
100% this. My system is modular, items added or removed according to need and/or space, but the Fieldmaster is the heart of it. Despite my best efforts I've never found anything else that will comfortably ride in pretty much any pocket, and have me so well covered in pretty much any situation.

Recently got back from a two week canoe solo canoe trip, where the only edged tools I took were the Fieldmaster and a hatchet. It had me well covered up to filleting good sized fish, wont take the skin off but it works good for grilling.

.... and whittling a spoon when I misplaced mine for a couple days.

.... and trimming up a few chipped/ torn finger nails, removing thorns and slivers, cutting forked sticks to use as fish stringers, loosening up stubborn guy-line knots, food prep, cutting notches in a stick to help me keep track of the days... its pretty much just as indespensible in the bush as it is for EDC.

Almost 6 years later and it’s still my favorite. Sounds like you had a great trip. I always enjoy hearing about people using their saks. They are very capable little tools. The more you know the less you need.

I've only been onto the Fieldmaster for a couple years, before that I carried a Farmer for a couple decades. Working in the trades however chipped nails and metal slivers are a constant irritation so I added a Classic SD to my keys for the scissors and tweezers. Problem is, I usually dont take my keys into the backcountry, or fishing if I'm going to be doing any wading... like I said, for an easily pocketable item that keeps the essentials covered in any situation the Fieldmaster has been unbeatable.

If I could only own one Knife period it would likely be the Buck 112, but so long as I could own even just two one of them would be a Fieldmaster. I've recently started adding this big old Western on fishing and camping trips and am finding them to be a great pair. It takes over for bigger camp/food prep/ fish cleaning jobs nicely, and while its not what I typically prefer in a hunting knife its entirely capable of turning game into meat as well.

Which one would you choose and why? Is there a tool or tools that you can't do with out?

I'd go with the Swisschamp. No matter which SAK i take with me, I usually wish i took that one. :)
SwissChamp is the king of SAKs! Yes, it’s bulky, but having pliers, a saw, and a magnifier in addition to the basics is worth the pocket space. I’ve used mine for everything from fixing glasses to field-dressing game.
 
One of my Ranger Grip models. Why? Because I am a mountain of a man and require an equally huge multi-tool; that’s why!
