I've just added about 40 knives to my list, but they are all under $30 so at worst I only need to come up with $1200...

You can get one of the Green Rivers new still for about $15, flat ground carbon steel at about 1/8" thick (they have 5", 6" and the less upswept sheep skinner). Try Track of the Wolf and Jantz Supply, among others.Thanks, skab8541, that's a really nice score. I'll keep looking.
