I wouldn't ever want to have just one, I like options, and if something breaks I would rather have a couple of spares.

I have been downsizing, doing away with some of the stuff I never carry and have no sentimental attachment to. It's better to save up and buy a few good ones rather than having a drawer full of junk.

I too had this philosophy. Now I have a drawer full of expensive stuff.
 
I have been paring down the collection for a while. A few years ago I sold off everything worth selling.
I am going through another purge here where I am selling off everything I do not currently use or know I will not use.
I keep a few users around, a couple favourites and the rest are sentimental from friends or grandfathers or what not.
I still enjoy knives and my collection may grow but it was too large after years of accumulation. Most of these low dollar knives are ones I have found in pawn shops or antique stores that I repaired. My enjoyment these days comes more from refurbishing old knives than buying new ones.
I suppose a few users is still a long way off from "the one".

However, I have curbed this by being extremely picky.

I have room for one more knife in my overpriced case.

My rules:

No duplicates
Must have something interesting about them, no more G-10 or FRN or plain Ti. I'm down to one G-10 and one FRN knife respectively. I have 0 plain Ti now.
Sell one to buy one. Just sold two, bought one, so I have space for one.
Can't be too similar to others I have (which is why my PM2 has custom burlap micarta scales, and my PM3 is a lw with Spy27),
 
Doubtful that anyone on this forum will downsize to one or two. But folks who haven’t caught our sickness have done it.

General Chuck Yeager carried a Victorinox Classic from his WWII days to his recent death.
 
Actually, I could downsize to just my BK14, as it does everything I daily need. Even larger chores like splitting firewood is possible without any hassle.
The blade shape, the ergos, steel all work perfectly for me. I use it on a daily basis and have several in different states of customization. Love that knife.

However I also enjoy different knives: I got a kitchen knife that is freaking thin and cutting "see through" slices of different veggies is fun. I also enjoy Big Chopping Knives and Machetes.
Knives are fun to use, whittling with a SAK or a Jääkäripuukko at the campfire is fun, chopping with my BK9 is very rewarding...

I am aware that asceticism and self limitation can be good for mental health, and if I feel the need to downsize or feel I cannot cope with my stuff, I will.
 
I’m interested in knowing if any of you have ever downsized to just one particular knife. Or if you ever just stuck with one and never gotten another. If so to either of those, why is that?

I downsized to just one knife quite a while ago. I bought a Benchmade Bugout immediately when they were first released, and that's basically been in my pocket ever since. I went through a period where I downsized to the Bugout and a Benchmade Mini Crooked River for special occasions or when I just wanted to change it up. After a couple years I bought a second Bugout in a different color combo and sold the Mini Crooked River. Probably about a year ago now (timeline is a little hazy) I put the second Bugout away in the safe and only carried my original blue one. Then in February I finally sold the second Bugout which left me with one knife overall--the original blue.

The reasons I did so are multi-faceted:

1. I absolutely love the Bugout. It's lightweight. It has the perfect length blade at 3.25". It has an awesome blade shape that makes it a heck of a slicer. I really like the axis lock. While it would not have been my first choice if there had been other colors when first released, I actually love the blue color. So a big part of my downsizing journey is due to the fact the Bugout checks all my boxes and is "the one" for me.

2. I've made the conscious decision the past 3-4 years to live a more minimalist life, and as a result I've majorly downsized all the things I own. I've realized that I don't actually want or need a bunch of stuff cluttering up my house and my life. It's just more things to take care of, worry about, fix, maintain, dust, etc.

3. There's something awesome about the simplicity of owning only one of your most favorite item and using the heck out of it. My Bugout is like an extension of me. It's in my pocket or in my hand for all of my adventures, mundane tasks, and life-changing events. There's just something special about the feeling of familiarity you get with a tool that you carry and use every single day. It doesn't get watered down as one of hundreds. I get to carry my favorite every day!

Man I would love to get down to 1 or 2 and have that knife that made the others irrelevant but I’m not sure it exists…I keep buying looking for it. I’m contemplating a fairly serious downsizing but I’m not sure if I’ll be able to let go of some of my GEC slipjoints. I don’t use them, just hoard them and I‘m getting less comfortable with that. If people like me didn’t obsess over one of literally every handle material and blade shape there might just be enough to go around. Anyway, talk a big game but haven’t shed any of the precious just yet.

I bet you are the type to try to solve all of the worlds problems with one screw driver, one drill bit, one socket wrench....etc......

Tools come in a variety of styles, shapes and sizes because that is the way in which real world confronts us.

Yeah, yeah, but he had a whole country running around eager to butter his toast for him. We don't have that.
