Thanks Alan and Gev. They're just called 'field mushrooms' here - I think they're known as 'meadow mushrooms' in the US? They don't keep long, so they usually go straight in a hot cast iron pan in butter, to be eaten on toast with a squeeze of lemon juice, salt 'n' pepper.
