They're just called 'field mushrooms' here - I think they're known as 'meadow mushrooms' in the US? They don't keep long, so they usually go straight in a hot cast iron pan in butter, to be eaten on toast with a squeeze of lemon juice, salt 'n' pepper.

Didn't want to take my chances with the kitchen knives while on our beach vacation. Brought my JK knife with me to help with my favorite summer snack.
