Kitchen KITH 2022

I rough ground the honesuki blade this morning, the edge is still 20 thou. I was struggling a bit with the hidden plunge line, that seems to be a whole lot easier on thinner, taller blades.

Thats a wicked looking profile. I reckon if you blend that plunge you'll be sweet.

Since the picture, I've managed to nick the spine in one spot a little bit while trying to blend the plunge line a little better. I think I'll do the rest by hand and see how that goes.

I hate it when that happens! I'll have a blade looking so nice and then one small move and a nick or worse...then it's all about the clean up and fix.

I tried to fix the nick on the grinder and got it for the most part before I decided to quit while I'm ahead. Then, I hand sanded both sides with 120 grit and a hard backer. I guess I should have wiped the blade a bit better before taking the picture...

I will take that to have it as a set next to you last years Nakiri. :)

Got some heat treating done today on the 2 gokujo one in 1084 and one in nitro v. Both came out of the quench straight. Also ripped and flattened some scales from some old bog kauri I have, really cool piece of timber should match the traditional theme of the knife well. Ignore the little harpoon, its just there to help prevent washing out the thin tip

The harpoon is a good idea, I will keep that in mind for future builds. The wood looks really interesting, can't wait to see it finished.

I hand sanded the blade and then used a Scotchbrite belt on a 10" contact wheel. I also ground a small K-tip just to make it look a bit more like a honesuki. I will grind that back a little more later on.

The handle is just a 3D printed handle I use to hold the blade while grinding. I think I might go with African blackwood and cocobolo for the permanent handle.
