Well, we aren't married, but calling her my "girlfriend" feels too cheap, "significant other" sounds like I'm bringing home someone of my same gender, and we're not engaged but it is very serious... Close enough. ANYWAY. ON TO THE ACTUAL THREAD.
A while ago, I gave her a SanRenMu WA3-401:

It's a small knife, good build quality. It was no special occasion or anything - we weren't even dating at the time - I just asked if she would have any use for it, and gave it to her.
Since then, she has had it with her at all times, day and night, using it whenever possible. She has named it Marvin, and after about 3 months of carrying it, she has decided that Marvin needs a buddy.
Some relevant points:
- She REALLY liked how smooth my Roommate's Shirogorov clone was (ceramic bearings) - ease of opening and closing is where my suggestion below fails.
- She likes utilitarian blade designs, like sheepsfoot and wharncliffe, etc, but I think she'd be down for pretty much anything
- Ergonomics are key. She has smallish hands and is a smallish person.
- She works in an office, and also has two other jobs; she works for the apartment complex she lives in as a cleaning service, and she also does market research for internet businesses. The knife needs to be relatively office-friendly, but still useful. For example, Marvin was used to scrape off some grout that maintenance workers failed to clean off of a bathtub in an apartment she was preparing to be photographed.
With those criteria, I suggested the Cold Steel Tuff Lite and the mini version (colors!) - I've had plenty of experience with the full-size model and can only speak glowingly about the ergos and utilitarian nature. On top of that, it's cheap (she's a bit scatterbrained and can lose things), light, sturdy, easy to maintain, secure in its lockup 100% of the time, non-weaponized, and offers a full-hand grip without being too large of a knife.
I'm sure I'm missing a bunch of other obvious options, though! I really could use some input here. If nothing else, thank you for reading this far.
