Knife steel and the everyday user.

I cut a lot of rope that spends up to a year sitting underwater on a sandy or muddy bottom. The rope itself becomes impregnated with the sand particles and is very hard on a knife's edge. Couple that with high strength modern commercial fishing rope and I get the same performance with "low end" steel and "high end" steel. I would rather touch up an easy to sharpen blade a few times during the work day than spend an hour trying to get a working edge back onto a high wear resistant super steel. Two of the best performing knives I have used have been a Victorinox Recruit and a Schrade Old Timer trapper with a carbon steel blade. They have outcut pretty much every other knife I have used at work.
