The ones you shared are very cool knives, Do you know what models they are?
Almost all prop knives at the time but the do exist in reproductions/collector editions. The list here should give you some best matches.

Max's folding knife/can opener that dangles from his belt. He used it to open the can of dog food. A Sheffield British Army rigging knife.

In the scene where "Wez" is getting his head shaved, I believe the knife used is a Buck 119. No screen shot.

And of course there was the machete "Max" had hidden under his car. But I have no idea what brand it is. And the paraplegic mechanic used a fixed-blade to cut a water bag open when he was on fire, but it looks like a common carving knife.

Yeah, I've seen the movie a few times. It was a favorite of my youth, and very influential :).

I’ve spotted a Strider in The Terminal List
If you read the books, both the author and James Reece are knife guys. Strider is mentioned, Half face blades, Winkler Sayoc Tomahawk, a few others ( I haven't read the latest one yet, though I downloaded it) but he also talks about how when on his various "missons" he doesn't carry his "nicer" knives for fear of losing/damaging them. The author is very specific about guns as well. While I enjoyed the amazon series, it strayed significantly from the series (probably because the author is conservative and has a LOT to say about the US government). I read approximately 44 books a year, and binged this series. If you like conspiracy theories, action and adventure type books, I highly recommend the Terminal List series by Jack Carr. One of my favorite non sci-fi/fantasy novels/series.

The Jack Reacher series I think mentions a Benchmade in one of them, as well as a custom all carbon fiber switchblade that one of Reacher's associates (former Army MP) carries that he is somehow able to get through airport security.

In the movie "Cobra" Sylvester Stallone carries a custom Michael Walker liner lock, and the bad guy carries a crazy looking knife that looks like something United cutlery would make.

I remember that knife in the movie "Collateral" though at the time I didn't know what a Sebenza was.

CSI used various knives, and NCIS has had a few Spydercos.
