Lets see your sharpest knives.

When I had an edgepro polished was the way to go for me also. I probably should stop posting so early. It doesn't really matter :)

Got my Glass Tape blank yesterday.:D:thumbup:

And 7000 grit tapes coming maybe today. :D

I can't wait to see ur results! Ur edges are tops :)

The last photo I posted was after using the glass blank with just the 3000 grit Tape.

The glass blank is so flat that it takes out all those little scratches. :D

I can really see the difference already and tell the glass holds the tape perfectly flat on the edge.

It's so sharp now that I can feel it cutting my thumb by just barely touching the edge.

Ok guys... i gotta ask- how are you getting these gorgeous mirror finish edges?

I use the Edge Pro Apex. :)

I don't know, i've yet to have a problem with a knife being too polished. It bites into anything I cut just fine, I don't need a toothy edge. Even with meat, I don't need to slice, I can just push cut and it's in two pieces.

More polished = Less friction = Less resistance in the cut.

Not to say a toothy edge isn't good, they work just fine, I just prefer the fully polished edges.

And you never will have a problem with an edge being higly polished.

The polished edge does not cut through meat the best though. It will push cut better, but you can't push cut through large pieces(such as whole Rounds, whole sirloins etc.. for instance). You can, but it will wear your arm out faster. A good med edge will save your arm from over working as it bites into the meat as you slice.

It really doesn't matter to the average person that does not use a knife for a living, they would NEVER know the differance.

But if your meatcutting 8 hours a day(or running a game processing buisness, as I did also) you can bet you can tell the diff. I thought most all already knew this??? You can also google about edges and read about what works best on what media.
My last post ever about sharpening!:p

So yeah, either edge is great for average use:thumbup:, and many of my blades have a high polish as that edge really cuts certain things better, and looks awesome.

Ken, is this the edge you would use for hunting knives, now that your out of doing it hours a day?

What type/grit of stone do you use for this?

Them's some nice edges, Ankerson! :D

On my EdgePro, I've used up to 2000 grit polishing tapes before. But, as nice as it makes the edge, I usually don't.

Most of the time, I'll go up to the Ultra-Fine stone (I think it's about 600 gr) and leave it at that. After the EdgePro, I strop on leather to refine the edge, and that's about all the sharp I generally need.

:eek: Jeez-us Ankerson, your going to need a titanium sheath to just keep that thing on your belt.

ROFL :D

I hear you. :)

My 7,000 Grit (20,000+ whetstone) polishing tapes came in today and I put them to the Boss Street and FFBM and well....

They are so sharp I am almost afraid to pick them up.
