My only white bone handled knife is a Waynorth harness jack from 2023, which I haven't carried much but has yellowed some, especially where it contacts metal, along pin holes and scales.

Edited to add: I think age adds a nice character and depth to white bone. It almost has a marble-like quality.

Wouldn't all-steel hardwear make more sense with stag and light-coloured bone?

I think it does make more sense and that is part of the reason all steel construction is desirable. I consider it a plus on any knife, even those with darker jigged bone where verdigris isn't as much of an issue color-wise.
