Mini Grip Vs. Delica?

Which is easier to sharpen?

The S30V in the mini ritter or VG-10 in delicas?

Most people here, myself included, are going to tell you from experience that the VG-10 is a lot easier to sharpen. S30V isn't too hard to sharpen, but I, like most, find VG-10 quite a bit easier.

S30V, in theory, should hold an edge a bit longer, but I've seen little difference in performance between my VG-10 and S30V blades.

True.Both are about equally easy to sharpen, though VG10 may be a tad easier, and S30V may hold its' edge a little bit longer.But you probably won' t even notice the difference.

The grips use 154CM.
 
Oops, I was just holding my Ritter Mini Grip with S30V, so I was talking about that.Sorry
 
I have a Ritter Grip, and the S30V was very easy to sharpen. Both companies are leaders of quality, you really can't go wrong.

After sharpening both knives I think they are about equal in sharpening difficulty.
