My dad and our family went through this a few months ago when my mom went from the same ailment. About all you can do is keep her comfortable as possible, and remember that she probably is more aware than it looks.
It is terrible to watch, but got to do it and remember, she is the one in charge of the process.
While all of us must eventually leave, it is still so sad to be with a loved one when it is happening. I grieve with you, Russ, and I want you to know that tears are very much a mark of love and endearment. Prayers for her and you, and a gentle passing into that good night.
