November BOTM Guesses?

All my kitchen knives end up in the dishwasher. So I’m gonna pass on this one.
 
The head cook is out grocery shopping (small wonder) at the moment.
I will ask her when she returns but my guess is it will be a pass.
I think she will find it too large.

edit.... I guessed right, she was not interested.

That is OK, I got my fix with the 119 Stealth Run this month.

moving faster than I figured. it's one of a kind though and a maybe never again knife, so it's got that going for it. bet flippers are snapping them up fast too.....

That is OK, I got my fix with the 119 Stealth Run this month.

After getting the 119 January BOTM, I couldn't justify getting the 119 Stealth Run. On the other hand, I guess I can't really justify the Breaker knife I just ordered. ;)

My kitchen knives probably see more routine use than any others I have. Excluding edc's.
It's nice having them around.
 
If you guys like ribeye, new york, or tenderloin... I can think of a great use of a breaker knife.

Around this time of the year Costco puts their giant, cryo packs of beef on sale. With meat prices being what they are, you can really save a lot of money by buying subprimal/cryo pack and cutting your own steaks. I often get choice new york steaks for under $5 a pound this way.

If you like lean ground beef, another pro tip is to ask the meat cutters behind the glass for a 10lb ground beef chub. They are about .50 cents per pound cheaper than the standard ground beef, and have a fat content that is considerably lower.
 
Now that’s a knoif mate ! 😆 about 30 years ago when I had four kids at home and some relatives living close by I could have made good use of this big boy. I was processing a fair amount of meat back then. I was using my dads butcher set he passed on to me that his dad passed on to him back in the late 1950s. I still have that set but my kids and relatives are all scattered from Texas to Alaska to eastern Kansas now so I don’t cut a lot of meat lately.

I like the knife, but I'd prefer a different steel.

What would you prefer?

I personally would have loved something like 52100 myself.

For a stainless (which is what my wife greatly prefers), I think 12c27Mod is just about ideal. :)

It’s very tough, very stainless, holds an ok edge (very similar to AEB-L)…. And most importantly, is SUPER fine grained. I can get a keener edge with 12c27 than almost any other stainless steel.
